Citrusy Chicken of the Woods Mushroom Salt Mix

The holiday season is ramping up and I am busy getting into high gear! One of my very favorite things to do during the winter months is to work on my variety of mushroom salt mixes. They are fun and easy to create, make great gifts, and add a nice personal touch.
I am constantly adjusting each recipe, working to refine the flavors. I started making mushroom salts back in 2014 and 9 years later, they are my most requested item. Not only do they add an incredible depth of savoriness to any dish, they are perfect for people who are mushroom-adverse. The best part is that each recipe can be catered to match your own personal tastes.
I incorporate various seasonings based on which ones will best compliment the mushroom I am using. I love the light, citrusy notes from chicken of the woods mushrooms and wanted to further highlight those flavors. True to my background, I always try to use as many foraged or garden grown ingredients in my mixes. Only the salt, peppercorn and paprika are store-bought.
Ingredients*
- One handful of dehydrated chicken of the woods mushrooms
- 1 tablespoon of Hungarian smoked paprika
- 1 tablespoon of whole black or tri-colored peppercorn
- 1 tablespoon of spruce tips
- 1 teaspoon of crushed spice bush
- 1 tablespoon of sumac
- I teaspoon of rosemary
- 2 dehydrated lemon slices
- 1/2 cup of coarse salt
*Again, you can use any combination of herbs and spices.
In a blender (I use my little Magic Bullet), combine all ingredients except for the sea salt – unless you want a fine salt mix. For finer salt mixes, add the salt to the mix as well.
Blend for 5 – 10 seconds.
Add in 1/2 cup of salt, then pump in blender twice to mix all ingredients.
Use salt mix on roasts, veggies, eggs, salads and more!
